Instructions

1
|
Preheat the oven to 350 degrees F and line an 8" square pan with parchment paper.
2
|
Arrange the graham crackers in the pan. Set aside.
3
|
In a small bowl, add the semisweet chocolate and oil. Heat in the microwave in 30 second increments until fully melted. Set aside.
4
|
In a large bowl, add the sugars, salt, eggs, and vanilla. Using an electric hand mixer, beat on high speed for about 5-6 minutes until the mixture has doubled in size.
5
|
While mixing on low speed, slowly pour the chocolate, oil mixture into the sugar, egg mixture.
6
|
Next, add the flour and cocoa powder, and mix on low speed until mostly combined.
7
|
Lastly, fold in the milk chocolate until evenly dispersed.
8
|
Pour the brownie batter over the graham crackers in the prepared pan.
9
|
Bake the brownies for about 35 minutes. Allow to cool completely in the pan, about 1 hour.
10
|
Once cool, arrange the marshmallows on top. Bake for 5-8 minutes until the marshmallows are puffy and evenly golden brown.
11
|
Remove the brownies from the pan, then cut into 9 squares and enjoy!

Tips & Tricks (5)

  • Toast Marshmallows Separately 🔥
Briefly torch or broil marshmallows on a separate sheet before adding to brownies—this creates a golden crust and prevents them from deflating in the oven.
  • Crush Graham Crackers Strategically 🍪
Pulse graham crackers to varied sizes (some fine crumbs, some larger pieces) so the base layer stays structurally sound while providing authentic texture throughout.
  • Bloom Your Cocoa Powder 🍫
Mix Dutch process cocoa with hot oil or melted chocolate before adding dry ingredients—this enhances chocolate flavor intensity and creates a smoother, more luxurious brownie crumb.
  • Underbake for Fudgy Centers ⏱️
Remove brownies 2-3 minutes before a toothpick comes completely clean; carryover heat will finish cooking while the interior stays gooey and pairs perfectly with marshmallows.
  • Use Both Chocolate Types Intentionally 🎯
Melt semisweet and milk chocolate together—the semisweet provides depth while milk chocolate adds sweetness and helps bind the layers cohesively for a professional finish.
