Instructions

1
|
In a medium bowl combine the flour, cocoa powders, baking powder, and salt. Set aside.
2
|
In a large bowl, use an electric hand mixer to cream together the butter and sugars for 2-3 minutes until light & fluffy.
3
|
Beat in the egg and vanilla until fully combined.
4
|
Scrape down the bowl, then add the dry ingredients and mix on low speed until just combined.
5
|
Fold in the roughly chopped chocolate with a rubber spatula until evenly distributed.
6
|
Using a 2 tablespoon cookie scoop, portion the dough onto a small parchment lined baking sheet. Freeze for 15-30 minutes.
7
|
Meanwhile, preheat the oven to 350 degrees F and line two large baking sheets with parchment paper.
8
|
Place the frozen cookie dough balls on the baking sheet about 2 inches apart. Top each of them with more chopped chocolate if desired. Bake for 10-12 minutes.
9
|
Once the cookies come out of the oven, immediately use a round cookie cutter or glass to scoot the edges in and make them perfectly round.
10
|
Allow to cool for a few minutes on the baking sheet, and enjoy!

Tips & Tricks (5)

  • Brown Your Butter for Depth 🧈
Brown the unsalted butter before mixing to add a nutty, complex flavor that complements the double cocoa and enhances overall richness without extra ingredients.
  • Blend Your Cocoa Powders Strategically 🫗
Sift together both Dutch-processed and black cocoa powder to eliminate lumps and ensure even distribution, which prevents bitter pockets and creates uniform chocolate flavor throughout.
  • Chill Dough for Superior Texture ❄️
Freeze the dough for at least 15-20 minutes before baking to prevent excessive spreading, allowing the cookies to develop chewy centers while the edges set up with the ideal crispness.
  • Use Room Temperature Eggs for Emulsion 🥚
Bring eggs to room temperature before mixing to create a proper emulsion with the butter and sugars, resulting in a smoother dough that incorporates air for better texture and rise.
  • Underbake by 30 Seconds 🕐
Remove cookies when edges are set but centers still look slightly underdone—they'll continue cooking on the hot baking sheet and develop that signature soft, fudgy center with chewy edges.
