Tasty, healthy, and a guaranteed showstopper. These are the three things that I can describe this spaghetti squash casserole recipe. It is notoriously low in carbohydrates, too.

Ingredients
- 2 pounds - spaghetti squash
- 2 teaspoons - olive oil
- 1 lb - ground turkey
- 1 piece - red onion
- 1 tsp - salt
- ½ tsp - black pepper
- 1 can - diced tomatoes
- 3 clove - garlic
- 1 tsp - Italian seasoning
- ½ tsp - red pepper flakes
- 1 cup - provolone cheese
- parsley
Instructions
- Start by preheating your oven to 375 degrees Fahrenheit.
- Next, slice the squash lengthwise. Make sure that you take out the seeds, too. After slicing, place the squash in an upside down position on a baking dish. Pour a half cup of water around the sliced squash.
- Bake the squash for around 40 minutes or until such time it gets mushy. Once done baking, let the baked squash cool down for a bit before removing the strings from its center. Use a fork to remove them and put them into a bowl. If you are keen enough, you will notice that the strings have a semblance to spaghetti.
- Lower the heat of the oven to around 350 degrees Fahrenheit. While doing this, start heating the olive oil in a skillet in a medium heat setting. After 5 minutes, you can already add the onion, bell pepper, black pepper, salt, and turkey. Cook them until the meat turns brown, and the veggies become soft.
- After that, add the Italian seasoning, garlic, tomatoes, and red pepper flakes in the mixture. Cook them for around four minutes. Pour the remaining squash and continue stirring until all the liquid has been thoroughly cooked. You can crank the heat if you want the cooking to be quicker. Lastly, pour half of the cup of the cheese.
- Prepare your baking tray by coating it with a cooking spray. Use a spoon to transfer the mixture you cooked in the tray. Make sure that you do it evenly. Discard any liquid residues as much as possible.
