Tips & Tricks (5)

  • Squeeze Out Spinach Moisture 💧
After thawing frozen spinach, press it firmly in a fine-mesh strainer or cheesecloth to remove excess water, preventing soggy bites and ensuring the filling sets properly.
  • Bloom Garlic in Butter First 🧈
Sauté minced garlic and diced onion in butter over medium heat for 2-3 minutes before adding spinach to develop deep, caramelized flavors that elevate the entire dish.
  • Combine Cheeses for Optimal Texture 🧀
Mix ricotta, mozzarella, and parmesan in specific ratios—ricotta for creaminess, mozzarella for stretch, and parmesan for sharp flavor—creating a balanced, cohesive bite that holds together perfectly.
  • Prevent Cracking with Room Temperature Eggs 🥚
Allow eggs to sit at room temperature for 15 minutes before whisking and adding to the mixture, ensuring they incorporate smoothly without temperature shock and create a tender, evenly-cooked custard.
  • Cool Filling Before Filling Molds ❄️
Let the spinach-cheese mixture cool to room temperature before spooning into greased muffin cups; this prevents the cheese from separating and helps the bites bake evenly with clean, defined edges.
