Ingredients

  • 5 ounces - spring mix lettuce
  • 4  - radish
  • 1  - carrot
  • 1  - avocado
  •  cup - sunflower seeds raw or roasted
  • ½ cup - extra virgin olive oil
  • 4 tablespoons - apple cider vinegar
  • 1 ½ tablespoons - coarse ground mustard
  • 1 ½ tablespoons - honey
  • 1 tsp - fresh lemon juice
  • ½ tsp - salt
  • ¼ tsp - black pepper

  1. Place the spring mix lettuce, radish, carrot, avocado and sunflower seeds in a large bowl.
  2. Toss with enough dressing to coat and serve immediately. For best results, do not toss the salad with dressing until right before serving. Enjoy!
