Ingredients

  • ¼ cup - low sodium soy sauce
  • 2 tablespoons - honey
  • 2 tablespoons - cilantro
  • 1 tbsp - oil
  • 1 - onion
  • 1 - bell pepper
  • 1 clove - garlic
  • 1 tsp - ginger
  • 1 lb - ground chicken
  • ¼ tsp - kosher salt
  • 8 - bibb, butter or iceberg lettuce leaves

Instructions

  1. Whisk together the soy sauce, honey, and cilantro in a small bowl and set aside.
  2. Heat 1 tablespoon of oil in a large sauté pan over medium heat. Add the onion and cook for 2 minutes until softened and fragrant.
  3. Toss in the bell pepper and cook for another 2 minutes, stirring occasionally.
  4. Add the garlic and ginger and cook for 1 minute until fragrant. Then add the ground chicken or turkey and sauté for 7 minutes, breaking it up as it cooks, until cooked through.
  5. Stir in the soy sauce mixture and salt and cook for 2 minutes until the juices evaporate and the filling is nicely coated. This step is important. Letting the liquid evaporate concentrates the flavor and keeps your lettuce cups from getting soggy
  6. Spoon the filling into lettuce cups and serve immediately. To eat, just roll the lettuce around the filling and enjoy it like a little burrito.
