Instructions

1
|
Bring a large pot of water to a boil, add 2 tbsp salt, add pasta and cook according to the package directions until al dente. Reserve 1/2 cup pasta water.
2
|
Melt the butter in a separate large pot over medium heat and immediately sprinkle in the flour. Whisk vigorously for 3 minutes or until the butter and flour make a paste.
3
|
Add the milk, bring to a boil, reduce to a simmer and whisk 3-4 minutes or until the mixture thickens.
4
|
Add the grated cheese and whisk until melted. Stir in the pasta and spring vegetable and coat the pasta throughly. The vegetables will warm during this process. If sauce is too thick add a little pasta water to loosen.

Tips & Tricks (5)

  • Toast Your Roux First 🧈
Cook the butter and flour together for 1-2 minutes over medium heat, stirring constantly, to eliminate the raw flour taste and create a deeper, richer flavor foundation for your cheese sauce.
  • Temper Your Cheese Addition 🧀
Remove the pan from heat before adding cheese, then stir in shredded cheddar slowly to prevent it from becoming grainy or separating—the residual heat is enough to melt it perfectly.
  • Use Freshly Shredded Cheese 🧀
Shred cheese directly from a block rather than using pre-shredded varieties, which contain anti-caking agents that prevent smooth melting and create a lumpy sauce.
  • Salt Your Pasta Water Generously 🍝
Season the pasta cooking water with kosher salt until it tastes like sea water—this is your only opportunity to season the pasta itself and build layers of flavor throughout the dish.
  • Finish with a Flavor Boost 🌿
Stir in fresh cracked black pepper, a pinch of cayenne, or finely minced spring vegetables just before serving to add complexity and prevent the dish from tasting flat or one-dimensional.
