Instructions

Add water to a medium saucepan and bring it to a boil. Add the oats and salt, then stir to combine. Reduce heat to medium-low and let the oats cook for 9-10 minutes, stirring occasionally as it cooks, until it has thickened and most of the water is absorbed.
2
|
Reduce heat to the lowest setting. Pour the egg whites over the cooked oatmeal very slowly, constantly whisking the egg whites so they don’t scramble. Continue whisking until all of the egg whites are added. The oatmeal should look thick and creamy at this point.
3
|
Add the brown sugar, vanilla extract, and cinnamon, then stir to combine. Next, dump the frozen berries into the oatmeal. Stir everything together and let the oatmeal sit for 3-4 minutes while the fruit warms up and the oatmeal sets.
4
|
Serve immediately with toppings like chopped almonds (my favorite), extra brown sugar, or your favorite milk or cream. Store leftovers in an airtight container with lid in the fridge for up to 4 days.

Tips & Tricks (5)

  • Temper Your Egg Whites First 🥚
Slowly add a few spoonfuls of the hot oatmeal mixture to your whisked egg whites before combining, preventing scrambled eggs and creating a silky, creamy texture throughout.
  • Toast Your Oats for Depth 🌾
Dry-toast the rolled oats in the pot for 1-2 minutes before adding liquid to develop a nutty, complex flavor that elevates the entire dish.
  • Don't Thaw Frozen Berries 🫐
Add frozen berries directly to the hot oatmeal at the end of cooking to maintain their structure, prevent color bleeding, and keep them bursting with fresh flavor.
  • Layer Your Spices Early ⏰
Bloom the cinnamon in the liquid at the start of cooking rather than adding it at the end to allow deeper flavor integration and prevent a raw spice taste.
  • Balance Your Sweetness Strategically 🍯
Add brown sugar to the cooking liquid rather than sprinkling it on top—this ensures even sweetness distribution and prevents clumping while allowing the berries' natural tartness to shine.
