Instructions

1
|
Preheat the oven to 325 degrees F. Line a 9x13 cake pan with parchment paper.
2
|
In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, baking powder, and salt.
3
|
Cut up the butter into small cubes and add to the dry ingredients. Mix on low speed until it resembles wet sand.
4
|
Add the oil, buttermilk, strawberry purée, eggs, and vanilla, and mix until just combined.
5
|
Pour the cake batter into the prepared cake pan. Use an offset spatula to spread it into an even layer.
6
|
Bake for about 30 minutes or until a toothpick inserted comes out clean. Immediately turn the cake out onto a wire rack to cool completely.
7
|
In a large bowl, add the mascarpone and sugar. Use an electric hand mixer to beat on low speed until smooth.
8
|
Continue mixing on low speed while pouring in the heavy cream in 2-3 additions. Turn the mixer up to medium speed and beat until stiff peaks form.
9
|
Once the cake is cool, spread the frosting on top and smooth out into an even layer. Place the cake in the fridge while you make the strawberry crunch topping.
10
|
Combine all ingredients in a food processor, and pulse until it turns into pea-sized crumbs.
11
|
Cover the cake with the strawberry crunch topping. When ready to serve, cut it into 24 squares and enjoy!

Tips & Tricks (5)

  • Stabilize Mascarpone Frosting 🥄
Whip heavy cream to stiff peaks before folding into mascarpone to prevent the frosting from becoming grainy or weeping, ensuring a silky texture that holds its shape.
  • Toast Golden Oreo Thins for Maximum Crunch 🍪
Lightly toast the crushed Golden Oreos in a dry pan for 2-3 minutes before combining with freeze-dried strawberries to intensify their flavor and enhance the crispness of your crunch topping.
  • Use Buttermilk Room Temperature 🥛
Ensure buttermilk is at room temperature before adding to the batter to promote even mixing and prevent the batter from becoming lumpy or dense, resulting in a tender, light cake crumb.
  • Strain Strawberry Purée for Vibrant Color 🍓
Pass your strawberry purée through a fine-mesh sieve to remove seeds and pulp, creating a smoother batter that distributes color evenly and prevents the delicate pink hue from appearing speckled.
  • Chill Cake Layers Before Frosting ❄️
Refrigerate cooled cake layers for at least one hour before frosting to prevent them from crumbling and ensure cleaner, more professional-looking layers with better structural integrity.
