Tips & Tricks (5)
- Macerate Strawberries for Maximum Flavor 🍓Toss diced strawberries with a tablespoon of honey and lemon zest 15-30 minutes before folding into batter to draw out juices and intensify sweetness without adding extra liquid.
- Keep Ingredients Cold for Tender Crumb 🧊Use chilled milk and eggs straight from the refrigerator, and chill your mixing bowl to prevent the batter from becoming warm, which creates dense, tough muffins instead of light, fluffy ones.
- Don't Overmix the Batter ✋Stir dry and wet ingredients together just until combined with visible flour streaks remaining—overmixing develops gluten and results in tough, tunneled muffins with a coarse texture.
- Fold Strawberries Last and Gently 🤲Add macerated strawberries as the very last step using a rubber spatula with gentle folding motions to prevent crushing the fruit and distribute them evenly throughout without deflating the batter.
- Use Zest Before Juicing Lemons 🍋Always zest your lemon first while the skin is intact, as it's nearly impossible to zest effectively after juicing; the lemon zest brightens the strawberry flavor and prevents the muffins from tasting one-dimensional.
