Tips & Tricks (5)
- Chill Between Coatings 🧊Refrigerate truffle centers for at least 30 minutes before dipping in candy melts to prevent them from falling apart and ensure a smooth, even coating.
- Temperature-Control Your Melts 🌡️Keep candy melts between 88-90°F using a double boiler or warming plate; overheating causes thick, lumpy coatings while too-cool melts won't adhere properly.
- Cream Cheese Moisture Management 💧Use room-temperature cream cheese and pat it dry with paper towels before mixing with cake mix to prevent overly wet centers that won't hold their shape.
- Layered Dipping Technique 🎨Dip truffles first in vanilla wafers, chill briefly, then dip in colored candy melts for a professional double-coating that prevents filling from leaking through.
- Strategic Sprinkle Application ✨Apply sprinkles immediately after dipping while the candy coating is still tacky, and use a toothpick to gently press them on for better adhesion and a polished look.
