Instructions
1
Fill a large pot with water and bring it to a boil over medium heat. Once boiling, add the pasta and cook until al dente.
2
Meanwhile, stir the tahini, lemon juice, nutritional yeast, and salt together in a small mixing bowl.
3
After the pasta is cooked, reserve at least 1 cup of pasta water in a measuring cup or glass. Drain the remaining cooking water and return pasta back to pot. Place on the stove over low-medium heat.
4
Pour the tahini lemon sauce over the cooked pasta and gently stir to coat, adding reserved pasta water ¼ cup at a time. Continue adding pasta water until your desired consistency is reached.
5
Taste and adjust seasoning, if needed. Tahini pasta is best served warm or at room temperature.

Tips & Tricks (5)
- Master the Pasta Water Ratio 💧Reserve at least 1 cup of starchy pasta water before draining—this is crucial for achieving the perfect creamy consistency without adding cream, as the starch emulsifies with tahini to create a silky sauce.
- Whisk Tahini Smooth First 🥄Mix tahini with lemon juice and a splash of pasta water off heat before combining with hot pasta to prevent clumping and ensure a uniformly creamy, lump-free sauce.
- Temper Your Tahini Carefully 🌡️Add the tahini mixture to the hot pasta gradually while tossing continuously, rather than dumping it all at once, to prevent the sauce from breaking or becoming grainy.
- Layer Your Acidity Strategically 🍋Use fresh lemon juice rather than bottled, and taste as you go—add more juice gradually to balance the richness of tahini and enhance the overall brightness of the dish.
- Finish with Umami Depth 🌾Toast your nutritional yeast briefly in a dry pan before sprinkling it over the finished pasta to intensify its savory, cheesy flavor and create a more complex taste profile.
