The Best Slow Cooker Buffalo Chicken Dip
Instructions
1
To the bowl of a slow cooker, add the cream cheese, shredded chicken, buffalo wing sauce, ranch dressing, blue cheese dressing, 1 cup (100 grams) of shredded cheddar cheese, garlic powder, onion powder, and white or black pepper. Stir to combine.
2
Cover the slow cooker and set it to low for 1 1/2-2 hours, or until the cream cheese is completely melted and the dip is hot. Stir the dip often to prevent burning. Taste and add more spices, if needed.
3
BROIL IN OVEN: this is my favorite way to finish the dip for that crispy top! When the dip is done, grease a small baking dish. Spoon the dip into the baking dish and sprinkle the top with the remaining 1/2 cup (50 grams) of shredded cheddar cheese. Broil on high until the cheese is bubbly.
4
SLOW COOKER: this is a better choice when you want to serve the dip in the slow cooker. When the dip is done cooking, sprinkle the top with the remaining 1/2 cup (50 grams) of shredded cheddar cheese. Cover and cook for 15-20 more minutes, or until the cheese is completely melted.
5
Garnish the finished dip with the chives or green onions and the blue cheese crumbles, if using. Serve with chips, pretzels, veggies, & other dippers. Enjoy!

Tips & Tricks (5)
- Shred Chicken Perfectly 🍗Use pre-cooked rotisserie chicken or poach chicken breasts separately before adding to the slow cooker for guaranteed tender, evenly-shredded pieces that won't become stringy or overcooked.
- Layer Your Cheeses Strategically 🧀Add cream cheese first on the bottom to create a smooth base, then layer cheddar and blue cheese to ensure even melting and prevent clumpy, separated texture throughout the dip.
- Balance Spice with Cooling Elements 🌶️The buffalo sauce brings heat, so the blue cheese and ranch dressing provide cooling contrast—taste at the 45-minute mark and adjust buffalo sauce ratios to avoid an overwhelmingly spicy dip that guests can't enjoy.
- Keep It on Low Setting Longer ⏱️Use the LOW setting for 2-3 hours instead of HIGH for 1-1.5 hours to prevent the dip from separating and developing a grainy texture while maintaining creamy consistency throughout service.
- Garnish Just Before Serving 🎯Add fresh green onions and a sprinkle of black pepper immediately before guests arrive to keep them vibrant and crisp rather than wilted, and stir the dip well to redistribute flavors that settle during cooking.
