Plain Crostini

1
|
Preheat the oven to 400°F (204°C). Slice the baguette at a diagonal into 1/2-inch slices.
2
|
Line the baguette slices cut-side up on a sheet pan. It's ok if they touch a bit on the edges. Using a pastry brush, lightly brush both sides of the toasts with olive oil. Season with a few pinches of salt, to taste.
3
|
Bake the crostini for 8-12 minutes, until they're golden brown and toasty. Cool completely and enjoy!

Garlic Crostini

1
|
If you want to make garlic crostini, start by slicing a couple of cloves of garlic in half. Right after the the they come out of the oven, rub both sides of the crostini with the cut side of the garlic.
2
|
Place them back in the warm oven for about 1 more minute if you want to tone down the spiciness of the raw garlic a bit.

Tips & Tricks (5)

  • Slice at an Angle for Maximum Surface Area 🔪
Cut your baguette at a 45-degree angle rather than straight across to create larger surface areas that crisp better and hold toppings more effectively.
  • Infuse Your Oil with Fresh Garlic First 🧄
Gently warm your olive oil with minced garlic for 2-3 minutes before brushing onto bread to develop deeper flavor and ensure the garlic doesn't burn during baking.
  • Toast in Two Stages for Perfect Crispness ⏱️
Bake at 400°F for 8 minutes until golden, then finish at 350°F for 2-3 minutes to achieve an evenly crispy texture without dark spots or burnt edges.
  • Salt Immediately While Still Hot 🧂
Add your salt right after removing crostini from the oven when they're still warm—this allows the salt to adhere better and distribute more evenly throughout.
  • Cool Completely Before Storing for Longevity 🌬️
Let crostini cool to room temperature on a wire rack before storing in an airtight container to prevent moisture buildup that makes them soggy.
