*Weight of apples is BEFORE peeling. Really any apples work here! I like sweet apples such as gala but granny smith or other tart apples work as well! you can even use a mix of several different kinds of apples.

Tips & Tricks (5)
- Apple Selection & Prep 🍎Use a mix of tart (Granny Smith) and sweet (Honeycrisp) apples to balance flavors; slice uniformly to ensure even cooking and prevent some apples from becoming mushy while others remain firm.
- Toast Your Oat Topping 🥘Bake the oat and pecan mixture at 350°F for 8-10 minutes before adding to the filling to enhance nutty flavors and achieve superior crispness that won't soften as the crisp bakes.
- Lemon Juice Prevents Oxidation & Boosts Flavor ✨Toss your apples with lemon juice immediately after slicing to prevent browning and brighten the overall taste, cutting through the sweetness for a more complex fall flavor profile.
- Vegan Butter Temperature Matters 🧈Use cold, cubed vegan butter in your topping mixture and work it in quickly with your fingertips until it resembles coarse breadcrumbs—this creates pockets of steam for maximum crispness.
- Strategic Cornstarch Placement 🥄Mix cornstarch with the apples only, not the topping, to thicken just the filling and prevent a soggy base while keeping the oat layer dry and crunchy throughout baking.
