Vegan Chocolate Chip Peanut Butter Bars

Instructions

In a small bowl stir the flax egg and place in the fridge for at least 15 mins to thicken.

Preheat the oven to 350° F.

line a 8X8 pan with parchment paper.

In a large mixing bowl beat melted butter and brown sugar.

Add vanilla and stir in the peanut butter and flax egg, till well combined.

Add the flour, salt and baking powder. Mix together till the flour isn't visible anymore. The batter will be crumbly with tiny and large crumbs.

Mix in the chocolate chips.

Evenly press batter into the prepared pan and bake at 350°F for 13-15 mins or until a toothpick or fork is inserted in the center and comes out mostly clean.

Take the pan out of the oven and let the bars cool in the pan for 10 mins to allow them to set or the bars may fall apart. Then completely cool on a wire rack.
