Instructions
1
|
Add the juice, agar agar, and maple syrup to a small saucepan over medium heat. Bring to a simmer and let cook for 2 minutes. Remove from the heat.
2
|
Let cool for just a minute, but no longer, as it hardens quickly.
3
|
Drip the liquid into gummy bear molds using a dropper, working quickly so the liquid doesn’t harden. Place the molds into the fridge to chill until hardened, about 20 minutes.
4
|
Pop out of the molds and store in an air-tight container. These can be stored at room temperature, but I suggest storing them in the fridge so they stay fresh longer.
Notes
1
|
Juice: I made 4 different flavors using pomegranate juice, lemon juice, grapefruit juice, and orange juice.
2
|
Texture: I want to stress that the texture of these gummy bears does not turn out quite as bouncy as traditional gummy bears. They’re a bit denser but still delicious and super fun!
3
|
I got about 150 traditional-sized gummy bears out of this recipe.

Tips & Tricks (5)
- Agar Agar Activation Temperature 🌡️Heat your fruit juice mixture to at least 160°F (70°C) before adding agar agar powder to ensure proper gel formation and prevent lumps from forming.
- Sweetener Balance for Texture 🍯Use liquid sweeteners like agave or maple syrup instead of granulated sugar, as they dissolve evenly and create a smoother, more uniform chewy texture in your gummies.
- Silicone Mold Chilling Hack ❄️Pre-chill your silicone molds in the freezer for 15 minutes before pouring to speed up setting time and achieve firmer gummies with cleaner edges.
- Flavor Concentration Technique 🍓Use 100% pure fruit juice concentrates rather than diluted juices to intensify flavor and prevent gummies from becoming too soft or bland.
- Strategic Stirring Method 🥄Stir the mixture gently in one direction only when adding agar agar to prevent incorporating excess air bubbles that create an undesirable texture in the finished gummies.
