Ingredients

  • 1 cup - oatmeal
  • 1 ½ cups - boiling water
  • 1 cup - brown sugar
  • 1 cup - granulated sugar
  • ½ cup - Vegetable Oil
  • 2 - eggs
  • 1 ½ cups - flour
  • 1 tsp - cinnamon
  • 1 tsp - baking powder
  • ½ tsp - salt
  • ½ cup - margarine
  • 1 cup - brown sugar
  • 1 cup - coconut
  • ½ cup - evaporated milk
  • ½ cup - walnuts
  • 1 tsp - vanilla

Instructions

  1. Preheat oven to 350 degrees. Add oats to a large bowl, pour water over oats and let sit until cooled.
  2. In a separate bowl, cream brown and white sugar with eggs and oil. Sift together remaining ingredients and add to sugar mixture. Fold in oatmeal mixture.
  3. Pour batter into greased 13×9 baking dish. Bake for 35-40 minutes or until cake tester inserted into the center comes out clean.
  4. When there is 10 minutes remaining, begin making frosting. In a large sauce pan, combine margarine, brown sugar and evaporated milk.
  5. Cook over medium heat, stirring constantly, until thickened, about 5-6 minutes. Once thick, remove from heat and add vanilla, coconut and walnuts.
  6. Spread frosting over hot cake. Allow to completely before serving.
