  • 1 cup - jasmine rice
  • 1 bulb - whole garlic
  • 1  - whole shallot
  •   - Salt
  •   - Black pepper
  • 1 tablespoon - olive oil
  • ½  - lime
  • 2 tablespoon - soy sauce
  • ¼ cup - chicken broth
  • 1 teaspoon - dried basil
  • 1 teaspoon - dried oregano
  • 1 teaspoon - dried thyme
  • 1 teaspoon - ground coriander
  • ½ teaspoon - ground cumin
  •   - cilantro
  • ½  - avocado

  1. Cook jasmine rice according to package directions. Set aside.
  2. Roast the garlic and shallot until soft and caramelized (about 20–25 minutes at 400°F).
  3. In a blender, combine the roasted garlic, shallot, olive oil, lime juice, soy sauce, chicken broth, and all spices. Blend until smooth.
  4. Pour the blended sauce over the cooked rice and mix well.
  5. Stir in chopped cilantro and top with diced avocado before serving.
