Tips & Tricks (5)
- Master Your Griddle Temperature 🔥Preheat your griddle to medium heat and test with a drop of water—it should sizzle gently, not violently. Consistent, moderate temperature ensures golden exteriors without burning while the centers cook through evenly.
- Chill Your Dough for Better Results ❄️Refrigerate your dough for at least 30 minutes before cooking—this prevents spreading and helps maintain the thick, cake-like texture Welsh cookies are known for. Cold dough also creates more defined, crispy edges on the griddle.
- Toast Your Spices First 🌟Bloom the nutmeg and other dry spices in the melted butter before mixing with flour to intensify their warm, aromatic flavors throughout the cookies. This extra step elevates the overall depth of your Welsh cookies.
- Distribute Currants Evenly 🍇Toss dried currants in a tablespoon of flour before folding them into the dough to prevent them from sinking to the bottom. This ensures every bite contains the desired fruit distribution and visual appeal.
- Flip Only Once for Optimal Texture 🥞Cook each cookie for 2-3 minutes until the bottom is lightly golden, then flip just once to finish cooking—avoid multiple flips which toughen the cookie. A single, confident flip creates that signature contrast between crispy exterior and tender interior.
