Balsamic Glaze

1
|
Add the balsamic vinegar and brown sugar to a small saucepan. Set the pan over medium-low heat, stirring often, until the balsamic comes to a gentle simmer.
2
|
Simmer the balsamic glaze, stirring often, until it coats the back of a spoon, about 8-12 minutes. Let the glaze cool completely. It will thicken as it cools.

Peach Ricotta Crostini

1
|
Spoon the whipped ricotta into a piping bag. Pipe the ricotta on top of the crostini. (You can also use a spoon to dollop the ricotta on top of the crostini instead.)
2
|
Place one peach slice on top of each toast. Drizzle the crostini with balsamic glaze and sprinkle with fresh basil. Enjoy!

Tips & Tricks (5)

  • Peak Peach Selection 🍑
Choose peaches that yield slightly to gentle pressure and have a fragrant aroma at the stem—this ensures maximum juiciness and sweetness that won't require excess sugar.
  • Whip Ricotta to Perfection 🥄
Beat ricotta with a hand mixer for 2-3 minutes until light and fluffy, which increases volume and creates an airy texture that's far superior to spreading plain ricotta.
  • Caramelize Brown Sugar for Depth 🔆
Toast brown sugar in a dry skillet for 1-2 minutes before sprinkling on peaches to intensify its molasses notes and create a subtle caramelized flavor that elevates the dish.
  • Balsamic Reduction Timing ⏱️
Make your balsamic glaze 10-15 minutes before assembly and let it cool to room temperature—this prevents it from melting the ricotta while ensuring the perfect syrupy consistency.
  • Basil Bruising Technique 🌿
Gently tear basil leaves by hand rather than cutting with a knife to release essential oils and prevent browning, preserving its fresh, peppery flavor until the moment of serving.
