Place the crostini in a single-layer on a sheet pan. Top each crostini with 2-3 apple slices followed by 1 slice of brie.

Sprinkle each slice of brie with about 1/2 teaspoon of sugar – try your best not to sprinkle the sugar on the apples. Using a kitchen torch, brûlée the sugar until it's evenly caramelized and golden-brown.
