Ingredients

  • 15 ¼ ounces - Vanilla Cake Mix
  • 1 ¾ cups - Pumpkin Puree

Instructions

  1. Preheat oven to 350F.
  2. Line two baking sheets with parchment paper or silicone baking mats. Set aside.
  3. In a large bowl, beat together the cake mix and pumpkin puree until well combined.
  4. Use a 1 1/2 Tablespoon cookie scoop to portion out the cookie batter at least 3″ apart on the prepared cookie sheets.
  5. Bake for 10-12 minutes until lightly golden and spread out.
  6. Allow the cookies to cool for 5 minutes on the baking sheet before attempting to remove to a cooling rack or serve.
