These 4th of July cookies are such an easy and festive treat! They bake up with soft centers and crisp, buttery edges, and of course studded with red, white, and blue sprinkles.

Ingredients

  • 280 grams - all-purpose flour
  • ½ tsp - baking powder
  • ½ tsp - baking soda
  • 1 tsp - kosher salt
  • 170 grams - unsalted butter
  • 150 grams - granulated sugar
  • 106 grams - light brown sugar
  • 1 - egg
  • 2 teaspoons - vanilla extract
  • 48 grams - red, white, and blue sprinkles

Instructions

  1. In a medium size bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  2. In a large bowl, add the butter and sugars. Use an electric hand mixer to cream them together until light & fluffy, about 2-3 minutes.
  3. Add the egg and vanilla and beat until fully incorporated.
  4. Scrape down the bowl, then add the dry ingredients and mix until just combined. Do not over-mix!
  5. Use a rubber spatula to gently fold in the sprinkles.
  6. Using a 2 tablespoon cookie scoop, portion the cookie dough and place on one baking sheet lined with parchment paper. Freeze the cookie dough for 30 minutes.
  7. Meanwhile, preheat the oven to 350 degrees F, and line two large baking sheets with parchment paper.
  8. Place the frozen cookie dough on one prepared baking sheet placed about two inches apart. Top each with more sprinkles, if desired.
  9. Bake the cookies for about 10 minutes. Allow cookies to cool completely on the baking sheet, and enjoy!
