From the Cook
1/2
6-Ingredient Orange Chicken
Instructions
1
Cut the chicken into 1-inch pieces. Combine the chicken, salt, and cornstarch in a medium bowl and set aside while you prepare other ingredients.
2
Combine the vinegar, sugar, and salt in a small bowl. Zest and juice the orange, and combine in a separate small bowl. Thinly slice the green onions on the diagonal and set aside for serving.
3
Set a dry, large, heavy-bottomed saute pan over medium-high heat. Once hot, add the oil, swirling to coat the bottom. Add the chicken and spread pieces into a single layer. Cook until well browned on underside, 2-3 minutes. Turn pieces over and cook until browned on second side, 2-3 minutes. Transfer chicken to a bowl.
4
Reduce heat to medium and add the vinegar-sugar mixture. Bring to a boil, stirring constantly, then cook until thickened slightly, about 30 seconds. Add the zest and juice and return chicken to pan. Cook, stirring well, until the sauce thickens and coats the chicken.
5
Sprinkle chicken with the reserved green onions and serve immediately.

Tips & Tricks (5)
- Pat Chicken Completely Dry 🏜️Use paper towels to thoroughly dry the chicken thighs before cooking—this removes moisture that prevents proper browning and creates that signature crispy exterior essential for restaurant-quality results.
- Bloom Your Cornstarch Slurry ✨Mix cornstarch with a small amount of cold orange juice before adding to the sauce to prevent lumps and ensure a silky, glossy glaze that clings perfectly to the chicken.
- Zest Before Juicing Citrus 🍊Always zest your oranges before cutting and juicing them—it's much easier to zest a whole fruit, and you'll capture maximum aromatic oils for deeper orange flavor throughout the dish.
- Reduce Sauce While Chicken Rests 🔄After removing the browned chicken, let it rest briefly while you vigorously reduce the sauce over high heat for 2-3 minutes—this concentrates flavors and creates a more luxurious coating.
- Toss at the Last Second 🎯Add the warm sauce to the rested chicken just before serving and toss gently to coat—this prevents the exterior from becoming soggy while ensuring the glaze stays vibrant and clings beautifully.
