Tips & Tricks (5)
- Pulse Pistachios for Texture Control 🥜Pulse pistachios to varied sizes rather than fine grinding—larger pieces create a crunchier, more luxurious crust that won't become powdery or dense during air frying.
- Pat Fish Completely Dry 💧Thoroughly pat halibut fillets with paper towels before coating to remove all surface moisture, ensuring the pistachio crust adheres properly and crisps evenly in the air fryer.
- Toast Pistachio Mix First 🔆Lightly toast the pistachio and breadcrumb mixture in a dry pan for 2-3 minutes before coating to deepen flavors and improve crispness without over-browning during air frying.
- Thin Mustard Layer Prevents Sogginess 🟡Apply a thin, even layer of Dijon mustard as your binder rather than a thick coating—this prevents excess moisture from softening the crust while adding tangy depth.
- Monitor First 5 Minutes 👀Check the halibut at the 5-minute mark to ensure even browning; rotate the basket if needed, as smaller fillets may cook unevenly and some air fryers have hot spots.
