Instructions
1
Place the vegetables in a large bowl and set aside.
1 medium zucchini,1 medium yellow squash,1.5 cups cauliflower florets,1 large golden beet,1 large red bell pepper,4 ounces mushrooms,4 ounces green beans,1 small red onion
2
Combine the za'atar seasoning and olive oil in a small bowl, then pour over the vegetables and toss well to coat.
1.5 tablespoons za'atar seasoning,2 tablespoons olive oil
3
Place the vegetables in the air fryer basket. If your air fryer is smaller, cook the vegetables in batches as they will cook more evenly if the basket is not over crowded. Cook at 390 degrees for 12-15 minutes or until the vegetables are tender and caramelized. Serve and enjoy!

Tips & Tricks (5)
- Cut Vegetables Uniformly 🔪Cut all vegetables into similar-sized pieces (roughly ¾-1 inch) to ensure even cooking and prevent some pieces from burning while others remain undercooked.
- Pat Dry for Crispiness 🧻Pat vegetables completely dry with paper towels before tossing with olive oil; excess moisture creates steam and prevents the golden caramelization you're after.
- Stagger Cooking Times 🕐Add denser vegetables like beets and cauliflower first (5 minutes), then add softer vegetables like zucchini and mushrooms halfway through to achieve perfect doneness across all ingredients.
- Don't Overcrowd the Basket 🚫Arrange vegetables in a single layer with space between pieces; overcrowding traps steam and results in steamed rather than roasted vegetables with lackluster color.
- Season in Layers 🌶️Toss vegetables with za'atar and oil before cooking, then finish with a light sprinkle of za'atar after air frying to intensify the spice flavor without burning the delicate spice blend.
