Almond Butter Stuffed French Toast

Welcome to my first post-pregnancy recipe post! This is actually a recipe that I worked on in the last few weeks before Jemma was born but just got around to photographing it last week. I’m completely obsessed with how this Almond Butter Stuffed French Toast turned out. Completely. Obsessed!

Ingredients

  • 4 - eggs
  • 1 ¼ cups - milk
  • 1 ¼ teaspoons - ground cinnamon
  • ¼ tsp - ground nutmeg
  • 1 tsp - vanilla extract
  • 1 pinch - salt
  • 6 slice - bread
  • 4 tablespoons - Barney Butter Almond Butter Bare Crunchy
  • cooking spray

Instructions

  1. In a large shallow dish, whisk together the eggs and milk. Add in the cinnamon, nutmeg, vanilla extract, and salt. Whisk until fully combined.
  2. Take each piece of bread and cut a large slit in the bottom edge about ⅔ across the slice so that there is a pocket in the center to stuff the almond butter inside.
  3. Using a butter knife, stuff each slice of bread with about ½ heaping tablespoon of almond butter. Gently spread the almond butter around the inside of the bread.
  4. Over medium heat, spray a large skillet with cooking spray.
  5. Place the slices of bread in the egg mixture and let soak on each side for a good few seconds.
  6. Cook the bread in the skillet for 3-4 minutes on each side or until a nice golden brown.
  7. Once done, top with syrup, fruit (if desired), and a dusting of powdered sugar.
