Almond Croissant Baked Oats

Preheat the oven to 180°C (350°F) using conventional oven settings (top and bottom heat). Grease a baking dish (approximately 20 x 20 cm / 8 x 8 inches) with a little oil or butter. Quarter half an apple and slice it thinly; cut the apricots into thin strips.

Place cottage cheese, eggs, milk, agave syrup, and bitter almond extract in a mixing bowl and blend until smooth using an immersion blender.

Stir the oat flakes, baking powder, apple pieces and apricots into the cottage cheese mixture, pour it into the prepared casserole dish and smooth it out.

In the mixing bowl just used, mix the almond butter, the remaining agave syrup, milk and bitter almond flavoring together until smooth, then spread evenly over the surface of the dough and top with the almond flakes.

Bake the oatmeal at 180°C (350°F) using conventional oven settings (top and bottom heat) for 30 to 35 minutes, or until the edges are golden brown. Let the baked oatmeal cool completely and then refrigerate. Enjoy it cold or warmed up in the morning.
