From the Cook
1/2
Apple Cinnamon Coffee Cake
Instructions
1
Preheat the oven to 350°F.
2
Spray a 9-inch square pan liberally with nonstick cooking spray. Set aside.
3
Place the butter, brown sugar, and vanilla in a large mixing bowl. Use a hand mixer to cream the ingredients together on medium-high speed until smooth, 1-2 minutes. Add the eggs, sour cream, and milk, and continue beating until the mixture is light and fluffy, about 1 minute.
4
Sift the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt into the bowl. Mix on low speed, scraping down the sides of the bowl with a rubber spatula as needed, until a smooth, thick batter forms. Fold in the diced apples.
5
Pour the batter into the prepared pan and smooth it into an even layer.
6
Place the flour, brown sugar, granulated sugar, cinnamon, and salt in a large mixing bowl. Stir with a fork to combine. Drizzle the melted butter over the mixture and mix until large crumbs form. Sprinkle the crumble evenly over the cake batter.
7
Bake the coffee cake on middle rack of oven until the topping is golden and a toothpick inserted in the center comes out clean, 35-45 minutes.
8
Check to see that the coffee cake is done. Remove from oven or add time as needed.
9
Allow the cake to cool in the pan for 15-20 minutes before serving. To store, cover tightly with aluminum foil or plastic wrap and keep at room temperature for 1-2 days, refrigerate for up to a week, or freeze for up to 2-3 months.

Tips & Tricks (5)
- Prepare Apples Just Before Mixing 🍎Toss freshly cut Granny Smith apples with lemon juice and assemble the batter immediately to prevent oxidation and maintain their crisp texture throughout baking.
- Bloom Your Spices in Butter ✨Toast the cinnamon, nutmeg, and cloves briefly in melted butter before combining with sugar for the crumb topping to intensify their warm flavors exponentially.
- Use Room Temperature Ingredients 🌡️Bring eggs, sour cream, and milk to room temperature before mixing to ensure proper emulsification and a tender, evenly-crumbed cake structure.
- Layer Apple Slices Strategically 📍Arrange apple slices in two layers throughout the batter rather than clustering them at the bottom to distribute moisture and spice flavor evenly for consistent bites.
- Cool Completely Before Serving 🧊Allow the cake to cool in the pan for 20 minutes, then on a wire rack for at least 1 hour, so the crumb structure sets properly and flavors fully develop.
