Instructions
1
Preheat the oven to 400℉. Line a baking sheet with parchment paper.
2
Whisk the flour, oats, brown sugar, cinnamon, and baking powder together in a large bowl. Cut the cold cubed butter into the flour mixture using a pastry cutter until the pieces of butter are the size of peas. Fold in the chopped apples.
3
In another bowl, whisk together the whipping cream, egg, and vanilla. Add to the flour/butter/apple mixture and gently fold with a spatula until the dough just starts to come together. Turn the contents of the bowl onto the countertop and knead/press the mixture just until the dough comes together.
4
Shape the dough into 3 even rounds each about 1 inch thick. Cut each round into 4 even wedges using a large knife and arrange them on the prepared baking sheet. Top each scone with a sprinkle of coarse sugar and oats, if desired. Bake in the preheated oven for 15-18 minutes or until golden. Enjoy!

Tips & Tricks (5)
- Keep Butter Frozen Until Baking 🧈Cut your cold salted butter into small cubes and keep it in the freezer until the last moment before mixing; this creates pockets of steam that produce those coveted flaky, tender scone layers.
- Dice Apples Just Before Assembly 🍎Cut your apples into small, uniform pieces immediately before folding them into the dough to prevent oxidation and browning, ensuring bright flavor and texture throughout baking.
- Don't Overmix the Dough 🚫Mix your dry ingredients and wet ingredients separately until just combined—overworking develops gluten and creates dense, tough scones instead of light, crumbly ones.
- Toast Your Oats for Depth 🔆Lightly toast the quick-cooking oats in a dry pan for 2-3 minutes before adding them to enhance their nutty flavor and prevent a raw, bland taste in the finished scones.
- Brush Egg Wash for Golden Perfection ✨Beat your egg and brush it generously onto unbaked scones, then sprinkle with coarse sugar for a beautiful caramelized crust and professional bakery-style finish.
