  • 1 bulb - fennel
  • ½ - apple
  • ½ cans - chickpeas
  • 4 - fresh mint leaves
  • 2 tablespoons - olive oil
  • 2 tablespoons - apple cider vinegar
  • 1 tbsp - honey
  • 1 tbsp - Dijon mustard
  • 1 tsp - salt
  • ½ tsp - garlic
  • ½ tsp - ground black pepper
  • ½ cup - walnuts

Instructions

  1. Slice the fennel bulb very thinly and place it in a large bowl. Add the sliced apple, chickpeas, and mint.
