  • 1 cup - black rice
  • 1 cup - edamame
  • 1  - bell pepper
  • 2  - clementines
  • 2  - green onions
  • ¼ cup - fresh cilantro
  •   - sesame seeds
  • 1 ½ tablespoons - rice wine vinegar
  • 1 tbsp - fresh orange juice
  • ½ tbsp - reduced sodium soy sauce
  • 2 teaspoons - maple syrup
  • 1 tsp - ginger
  • 1 tsp - sesame oil
  • ¼ cup - extra virgin olive oil
  • 1 clove - garlic

  1. Place the black rice in a large serving bowl. Add the edamame, bell pepper, clementines, green onions, and cilantro to the bowl. Set aside.
  2. In a small bowl, whisk together the rice wine vinegar, orange juice, soy sauce, honey or agave, ginger, garlic, and sesame oil. Whisking constantly, add the olive oil in a slow steady stream. Add a pinch of salt if desired,
  3. Add the dressing to the salad and toss to combine until the salad is well coated with the dressing. Sprinkle with sesame seeds, if using, then serve and enjoy!
