Instructions
1
In a medium bowl, whisk the eggs, water, salt and pepper until no streaks remain.
2
Melt 1 tablespoon of butter in a medium non-stick skillet over medium-low heat. Add the eggs and tilt the pan to cover the bottom of skillet. Allow to sit for 30 seconds, then stir gently, until scrambled, about 3-4 minutes. Remove from heat and set aside.
3
Wipe out the skillet you used to cook the eggs. Melt 1/2 tablespoon of butter over medium high heat.
4
Use remaining tablespoon of butter to coat one side of each slice of bread.
5
Place 2 slices of bread, butter side down, in the skillet.
6
Top each piece of bread with 1 1/2 slices of American cheese, two bacon slices, half of the scrambled eggs and another 1 1/2 slices of cheese.
7
Top each with remaining slices of bread, butter side up.
8
Cook for 2-3 minutes or until bread is golden brown. Flip each sandwich and cook for an additional 2-3 minutes or until golden and cheese is melted.
9
Remove from the skillet and slice each sandwich in half.

Tips & Tricks (5)
- Butter Your Bread Properly 🧈Spread softened butter on the outside of both bread slices before grilling, not the inside—this ensures even browning and prevents the sandwich from becoming greasy while maximizing that golden crust.
- Cook Eggs Low and Slow 🥚Scramble your eggs on medium-low heat with a splash of water and remove them slightly underdone—they'll continue cooking from residual heat and stay creamy rather than rubbery when assembled.
- Pre-Cook Bacon Completely 🥓Cook bacon until extra-crispy before assembly so it won't release moisture into the sandwich and maintains its crunch even after the grilled cheese is heated through.
- Layer Cheese Between Bread and Fillings 🧀Place one cheese slice directly against each piece of bread before adding eggs and bacon—this creates a protective barrier that melts evenly and keeps fillings from making the bread soggy.
- Medium Heat for Even Melting ⏱️Cook the assembled sandwich on medium heat (not high) for 3-4 minutes per side, pressing gently—this allows the cheese to melt completely while the bread toasts golden without burning.
