Preheat the oven to 400°F (200°C) top and bottom heat.

Mix the breadcrumbs with 2 tsp oil on a baking sheet, spread them out evenly, and toast in the oven for 4–5 minutes. About halfway through (after ~2 minutes), stir or shake the pan so the breadcrumbs brown evenly.

After toasting, reduce the oven to 360°F (180°C) fan/air circulation (or leave it at 400°F if not using convection).

Place the toasted breadcrumbs in a deep plate and mix them with garlic powder, paprika, cayenne pepper, salt, and pepper.

Line a baking sheet with parchment paper and brush it with about two teaspoons of oil. Whisk the egg and buttermilk together in a second, shallow bowl, and place the flour in a third bowl.

Remove any tendons from the chicken and cut it into bite-sized pieces. Coat the chicken pieces one at a time first in flour, then in the egg-buttermilk mixture, and finally in the toasted breadcrumbs, then place them side by side on the baking sheet.

Bake the chicken nuggets in the oven for about 15 minutes or until the chicken pieces have reached a core temperature of 75°C.
