Baked Chicken Schnitzel

Preparation

Preheat oven to 200°C. Line a baking tray with parchment paper.

Remove any tendons from the chicken breasts and slice them horizontally in half. Place the chicken pieces between two sheets of parchment paper or plastic wrap and gently pound them thinner using a heavy object (like a skillet or meat mallet). Season both sides of the chicken with salt, pepper, and paprika.

Put flour in the first deep plate, crack eggs and whisk them in the second plate, put breadcrumbs (panko, breadcrumbs or cornflakes) in the third plate (and optionally mix with grated Parmesan).

Coat the chicken pieces first in the flour, then in the beaten eggs, and finally in the breadcrumb mixture, making sure both sides are evenly covered at each step. Place the breaded chicken on a baking sheet lined with parchment paper.

Slide the baking sheet into the oven and bake for about 18–20 minutes. The chicken schnitzel is done when it reaches an internal temperature of 175 °F (80 °C).
