Baked Delicata Squash

One of the easiest and most delicious squash to enjoy in fall and winter is delicata. This simple Baked Delicata Squash recipe makes a perfect side dish. It's lightly seasoned and baked in the oven until the exterior gets caramelized and the centers are soft and tender.

Ingredients

  • 2 - delicata squash
  • 2 tablespoons - olive oil
  • ¾ tsp - kosher salt
  • ¼ tsp - black pepper
  • ½ tsp - smoked paprika

Instructions

  1. PlaceholdPreheat oven to 425 degrees F. Line a large baking sheet with parchment paper.
  2. Prepare the squash by trimming the ends from each delicata squash. Slice lengthwise and scrape out the seeds. Cut into ½-inch half-moon slices.
  3. Place squash on the baking sheet. Drizzle with olive oil, then sprinkle with salt, pepper and smoked paprika, if using. Toss to coat and spread into an even layer.
  4. Bake for 25 to 30 minutes, flipping halfway through, until the squash is tender and caramelized around the edges.
  5. Serve warm.
