These juicy, savory oven-baked meatballs offer a lighter alternative to traditional pan-fried versions while still delivering rich flavor and tenderness. Made with simple ingredients and baked until perfectly cooked, they require minimal hands-on effort and less added fat. The meatballs can be prepared ahead of time, stored in the refrigerator, and reheated as needed, making them a practical option for meal prep.

Instructions

1
|
Preheat oven to 200°C (top and bottom heat) and line a baking tray with baking paper.
2
|
Peel and finely dice the shallot and garlic, then place them in a large bowl with the ground meat, egg, breadcrumbs, parsley, Parmesan cheese, and spice mix. Season the meat mixture generously with salt and pepper and knead it together with your hands or a spoon until a homogeneous dough forms.
3
|
Using a dough scoop (or tablespoon), scoop out 15 to 16 equal portions of the ground meat mixture and shape them into balls with your hands. Place the meatballs side by side on the baking sheet lined with parchment paper.
4
|
Bake the meatballs in the oven at 200°C for approximately 18 to 20 minutes, until they are slightly crispy on the outside and cooked through on the inside, or until the internal temperature reaches 71°C. If desired, switch to the grill function for the last two to three minutes and move the baking sheet to the top rack. This will make the meatballs even crispier on the outside.

Tips & Tricks (5)

  • Moisture Magic 💦
Mix in a splash of milk or water with the breadcrumbs to keep the meatballs incredibly moist and prevent them from becoming dense or dry.
  • Even Size Matters 🧘‍♀️
Use a cookie scoop or weigh each meatball to ensure uniform size, which guarantees consistent cooking and professional-looking presentation.
  • Flavor Layering Technique 🌶️
Toast the breadcrumbs with a little olive oil and garlic before mixing into the meat to develop deeper, more complex flavor profiles.
  • Baking Rack Trick 🥄
Place meatballs on a wire rack over a baking sheet to allow air circulation and prevent soggy bottoms, ensuring crisp exterior and even browning.
  • Cheese Integration Hack 🧀
Grate Parmesan very finely and mix thoroughly into the meat mixture to help bind the ingredients and add subtle umami depth.
