Baked Strawberry Donuts

For the glaze:

Instructions

1
Pre-heat oven to 350 degrees F. Grease a 6 cavity donut pan for cooking spray.
2
In a large bowl, mash your banana until few lumps remain. Stir in the milk, nut butter, maple syrup, and vanilla. Stir until well combined.
3
Over top of the wet ingredients, sift together the flour, baking soda, baking powder, and salt and mix everything together to combine. Fold in the diced strawberries.
4
Evenly spoon or pipe the mixture into the 6 donut cavities.
5
Bake in oven for 13-17 minutes or until golden brown and a toothpick inserted in the middle comes out clean. Let cool slightly and then remove from the pan to a wire rack to cool completely.
6
Make the glaze by whisking together the powdered sugar, strawberry, and water until fully combined. Add a 1/2 teaspoon more of liquid as needed. Dip the cooled donuts into the glaze or drizzle it on top. Place in the fridge, as desired, to harden the glaze. ENJOY!

Tips & Tricks (5)

  • Don't Overmix Your Batter 🥄
Mix wet and dry ingredients until just combined to avoid developing gluten, which creates dense, tough donuts instead of light, fluffy ones.
  • Freeze-Dried Strawberry Powder Technique 🍓
Sift the powdered freeze-dried strawberries through a fine mesh before adding to ensure no lumps and even strawberry distribution throughout the batter.
  • Fill Donut Cavities Completely 🍩
Use a piping bag or donut batter dispenser to fill your donut molds to the very top for maximum rise and no flat spots during baking.
  • Double-Dip Glaze Method ✨
After the first glaze coat sets for 2-3 minutes, dip again for a luxurious, thick coating that won't drip off and creates that bakery-quality finish.
  • Cool Before Glazing Completely 🧊
Let donuts cool for at least 10 minutes after baking but apply glaze while still warm to room temperature for optimal adhesion and a glossy appearance.
