Ingredients

  • 2 ½ cups - All-Purpose Flour
  • 1 tbsp - baking powder
  • ½ tsp - Salt
  • ½ tsp - Baking Soda
  • 1 tsp - Cinnamon
  • ½ cup - Vegetable Oil
  • ¾ cup - White Sugar
  • 2 - eggs
  • ½ cup - Greek Yogurt or Sour Cream
  • 1 tsp - Vanilla Extract
  • ½ cup - Milk
  • 1 ½ - Chocolate Chips

Instructions

  1. Preheat oven to 400F.
  2. Line a jumbo muffin tin with large muffin liners and set aside.
  3. In a small bowl, whisk together the all-purpose flour, baking powder, salt, baking soda and cinnamon until well-combined. Set aside.
  4. In a large bowl, beat together the oil and white sugar until light and fluffy.
  5. Add the eggs, Greek yogurt and vanilla extract and beat until well-combined.
  6. Add the dry ingredient, stir until well-distributed and no dry streaks remain.
  7. Add the milk and stir until well-combined, then add in the chocolate chips to personal taste.
  8. Distribute the muffin batter evenly among the prepared muffin liners, filling as close to the top of the liners as possible.
  9. Bake for 8 minutes, then reduce heat to 350F and continue to bake for 15-20 minutes until an inserted toothpick comes out clean.
