Place the peppercorns and mustard seeds in a mortar and crush them well. You can also roughly grind them in a spice grinder or with a small blender. Then add the coarse salt and crush a little more. Medium-grain salt does not need further grinding.

Mix the crushed spices with the remaining ingredients and store in an airtight spice jar or container.

Place all the dressing ingredients in a screw-top jar, close it tightly, and shake thoroughly like a cocktail until all ingredients are combined.

For a large salad (3–4 servings), use the entire dressing. For a single serving or a side salad for two, 3–4 tablespoons are sufficient. Any remaining dressing can be stored in an airtight container in the refrigerator for up to five to seven days.
