Instructions

1
|
Preheat oven to 350º F.
2
|
In a bowl, whisk together the flour, baking soda, and salt.
3
|
In the bowl of a standing mixer, cream together the butter and sugar for 3 minutes, until light and fluffy.
4
|
Add the egg, bananas, milk and vanilla and mix to combine well.
5
|
Gradually add the dry ingredients into the wet ingredients until just combined. Gently fold in the berries. Frozen berries can be substituted for fresh. Add berries while frozen, no need to defrost. This will help from coloring the bread.
6
|
Pour the batter into a 9 x 5 inch greased loaf pan and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
7
|
Allow the bread to cool for 10 minutes, then remove to a cooling rack.

Tips & Tricks (5)

  • Choose Perfectly Ripe Bananas 🍌
Use bananas with brown spots and a sweet aroma for maximum natural sweetness and moisture; overripe bananas break down better into a smooth batter while adding deeper flavor.
  • Fold Berries Strategically 🫐
Toss frozen berries in a tablespoon of flour before folding them in at the end to prevent sinking to the bottom and to minimize their color bleeding into the batter.
  • Don't Overmix the Batter 🥣
Mix wet and dry ingredients until just combined with a few small lumps remaining; overmixing develops gluten and creates a dense, tough bread instead of a tender, moist crumb.
  • Use Room Temperature Eggs 🥚
Let eggs sit out for 15-20 minutes before adding them to ensure they blend smoothly into the batter and create a more uniform, moist texture throughout the loaf.
  • Test Doneness with a Toothpick 🧪
Insert a toothpick into the center—it should come out with just a few moist crumbs, not dry or with batter; this prevents overbaking while ensuring the center is fully cooked.
