Preheat the oven to 360°F (convection) or 400°F (top/bottom heat). Grease a loaf pan and dust it with flour, or line it with parchment paper. Chop the chocolate into small pieces with a knife.

Peel the bananas and mash them into a smooth puree with a fork. Add the eggs and vanilla extract, and whisk together until well combined.

Stir in the oil, salt, and sugar. In a separate bowl, mix the baking powder and flour together, then fold them into the wet ingredients.

Fold the chocolate into the batter. Pour the batter into the prepared loaf pan and bake at 360°F for 40 to 45 minutes. Remove from the oven and let it cool in the pan. Then carefully remove or lift the banana bread out of the pan.
