For the Cake

1
|
Preheat the oven to 350℉ and grease or line a 9X9-inch baking pan with parchment paper.
2
|
In a large bowl using a handheld electric mixer, cream together the butter and sugar until combined. Add the eggs and vanilla and mix until smooth. Add the mashed bananas and milk and mix until all is combined.
3
|
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add this mixture to the wet ingredients and mix at low speed until just combined. Do not overmix!
4
|
Pour the batter into the prepared pan and bake the cake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and let cool completely before frosting. Enjoy!

For the Frosting

Tips & Tricks (5)

  • Banana Ripeness Magic 🍌
Use overripe bananas with black spots for maximum sweetness and moisture in your cake - the darker and softer, the better the flavor!
  • Frosting Consistency Control 🥄
Bring peanut butter and butter to room temperature before mixing to ensure a smooth, creamy frosting without lumps.
  • Moisture Preservation Technique 💦
Cover the cake with plastic wrap or a cake dome immediately after cooling to lock in moisture and prevent the cake from drying out.
  • Ingredient Activation Hack 🥣
Combine baking soda and baking powder with the wet ingredients first to activate their leavening properties and ensure maximum rise.
  • Frosting Application Pro Tip 🧁
Chill the cake for 15-20 minutes before frosting to create a stable surface that prevents crumbs from mixing into the peanut butter frosting.
