Banana Yogurt Cake is an easy snack or dessert that anyone will love! It's filled with sweet bananas plus extra protein thanks to the yogurt! One of our favorite treats we’ve been making lately is Banana Yogurt Cake made with vanilla yogurt adding a rich vanilla flavor. It couldn’t be easier to make and is a great use for spotty bananas!

Ingredients

  • 1 ½ cups - white whole wheat flour
  • ⅓ cup - brown sugar
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • 1 tsp - ground cinnamon
  • ¼ tsp - kosher salt
  • 3 - very ripe bananas
  • 1 - egg
  • ¼ cup - canola oil
  • 1 tsp - vanilla extract
  • 1 cup - vanilla yogurt
  • 1 cup - powdered sugar
  • 3–4 tablespoons - milk of choice

Instructions

  1. Preheat the oven to 375F.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the yogurt, mashed banana, egg, oil, and vanilla.
  4. Pour the yogurt mixture into the flour mixture and mix until just combined.
  5. Pour the batter into a greased 8 inch square baking dish.
  6. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
