
Barbecue Beef and Cheese Casserole

Ingredients
- nonstick cooking spray
- 1 tbsp - salted butter
- ½ cup - onion
- 3 cloves - garlic
- 2 pounds - ground beef
- ½ cup - barbecue sauce
- 1 ½ cups - shredded cheddar cheese
- 1 - pkg. refrigerated biscuits
- ½ cup - shredded cheddar cheese
Instructions
- Preheat the oven to 400°F.
- Spray a 9x13-inch baking dish liberally with nonstick cooking spray. Set aside.
- Melt the butter in a large saute pan. Add the onions and cook for 2-3 minutes. Add the garlic and ground beef and cook until browned, breaking up the beef with a wooden spoon, 5-6 minutes.
- Remove the beef mixture from heat and add the barbecue sauce and cheese. Stir to combine.
- Line the bottom of the prepared baking dish with the biscuits. Top with the beef mixture and remaining cheese.
- Bake the casserole on middle rack of oven until beef reaches a temperature of 160°F, biscuits are cooked, and cheese is bubbling, 15-20 minutes.
- Check to see that casserole is done. Remove from oven or add time as needed.
- Serve casserole immediately.
