This cozy Beef & Cabbage Shepherd’s Pie is super hearty and exactly the kind of dish you want when you plan to stay in your PJs and watch reruns of Supernatural all night. Our version has no peas, because we’re not big fans. Instead, we use cabbage and cook it with carrots, onions, and ground beef. It all gets coated in a rich, hearty gravy made with thyme, broth, a little tomato paste, and some Worcestershire sauce. Finally, we top the meat and vegetables with creamy mashed potatoes and a dusting of parmesan and bake it until golden and bubbly.

Making the Potatoes

1
|
Add the potatoes to a pot of cold salted water.
2
|
Bring water to a boil and cook the potatoes for about 20 to 25 minutes more, or until tender.
3
|
Drain the potatoes, then mash with butter and milk. Season with salt and pepper to taste.

Making the Beef & Veggies

1
|
Add 1 tbsp of butter to a braiser or deep oven safe sauté pan set over medium heat. Add the vegetables and thyme and cook for 5 minutes. Season with salt and pepper.
2
|
Add the beef, season with salt and pepper, and cook for 7 minutes or until almost cooked through.
3
|
Make a well in the center of the pan and add 1 tbsp of butter, then mix in the flour and cook for 1 minute.
4
|
Mix in the tomato paste, Worcestershire, and broth.
5
|
Bring the sauce to a boil, then reduce the heat to a simmer and cook for 15 to 20 minutes until the sauce thickens and becomes more of a gravy.
6
|
While the gravy is cooking, preheat the oven to 375°F.

Assembling & Baking

1
|
Top the meat and vegetables with the prepared mashed potatoes, using a fork to even them out and carefully spread the potatoes to the edges.
2
|
Top the mashed potatoes with parmesan.
3
|
Bake for 20 minutes then broil on high for 2-3 minutes until golden brown.
4
|
Garnish with chives.

Tips & Tricks (5)

  • Potato Perfection 🥔
Warm your milk and butter before adding to mashed potatoes to create an ultra-smooth, creamy topping that spreads easily over the filling.
  • Cabbage Caramelization Secret 🥬
Pat the cabbage dry before sautéing to ensure proper browning and prevent excess moisture that could make the filling soggy.
  • Flavor Layering Technique 🧅
Caramelize the onions slowly before adding ground beef to build a deep, rich base of flavor for the shepherd's pie.
  • Gravy Thickening Pro Tip 🥄
Create a smooth roux by cooking flour and butter together before adding beef broth to prevent lumpy gravy and enhance the sauce's depth.
  • Golden Crust Hack 🧀
Sprinkle an extra layer of parmesan cheese on top and broil for 2-3 minutes to create a crispy, golden-brown crust that adds incredible texture.
