Ingredients
- 2 cans - beets
- 1 can - pink beans
- 1 cup - walnuts
- 2 ounces - feta cheese
- 10 - fresh mint leaves
- 2 - lemons
- 1 - lemon
- 2 tablespoons - olive oil
- 1 tbsp - mustard
- ½ tsp - red pepper flakes
- 1 tsp - salt
- ½ tsp - black pepper
Instructions
- Whisk together olive oil, mustard, lemon juice, zest, red pepper flakes, salt, and pepper until emulsified.
- Add sliced beets and pink beans. Toss gently to coat.
- Fold in walnuts and chopped mint. Adjust seasoning to taste.
- Chill 30 minutes if desired.
