- 1 lb - strawberries
- 6 ounces - blackberries
- 6 ounces - blueberries
- 6 ounces - raspberries
- 10 - mint leaves
- 1 - lemon
- 3 tablespoons - honey
- 1 ½ cups - heavy whipping cream
- 1 cup - mascarpone
- 4 tablespoons - honey
- ¼ tsp - sea salt
Instructions
- Combine all of the berries and mint in a large bowl.
- Make the honey lemon syrup by whisking together the lemon zest, lemon juice, and honey in a small container.
- Pour the honey lemon syrup over the berries and toss gently to combine.
- Using an electric hand mixer (or even a stand mixer) and a separate bowl, whip together the heavy cream, mascarpone, honey, and salt until it forms soft peaks.
