These Berries and Cream with Mint and Honey Lemon Syrup is a refreshing mix of strawberries, blackberries, raspberries, blueberries, and mint tossed in a honey lemon syrup. The fresh fruit and mint are topped with a whipped honey mascarpone cream for a finishing touch. Instructions
- Step 1
Combine all of the berries and mint in a large bowl.
- Step 2
Make the honey lemon syrup by whisking together the lemon zest, lemon juice, and honey in a small container.
- Step 3
Pour the honey lemon syrup over the berries and toss gently to combine.
- Step 4
Using an electric hand mixer (or even a stand mixer) and a separate bowl, whip together the heavy cream, mascarpone, honey, and salt until it forms soft peaks.
- Step 5
Serve the berries with some mascarpone cream on top, and garnish with more lemon zest and mint, if desired.
